Updating Symantec Client to version 12.1.4013.4013

I just have a question around updating our symantec client to version 12.1.4013.4013 and not restarting the server for the changes to take effect untill about 12 - 14 hours later when the servers are scheduled to reboot for maintenance/patch purposes.

I.e if I update the clients the Friday afternoon and only restart the servers the next morning, will that leave the servers/client vulnerable at all? Or prevent definitions from updating if they were to become available?
